We have dams in the Brahmaputra. All we have to do is close the gates [\b]and dry the water up. If your government tries to bomb the dams, even if successful it will just unleash a flood on the plains. We can also bomb dams on the Ganges with cruise missiles and bombers and cause a flood killing tens of millions along the Ganges.
You can't do the same to us. First, even if you can, our official policy is to treat bombing of dams as a nuclear strike on China. You will not be even close to winning a nuclear war, 1 bomb of ours has more power than your whole nuclear arsenal. Second, how will you deliver the bombs to the dam unless by ballistic missile? Most of China's important dams are far in the interior, out of range of Indian aircraft. In addition, there are numerous fighter bases and SAM sites nearby. Thirdly, even if bombers get through, the dam was designed to withstand a tactical nuke.
That's just water alone. We can also buy grain on the world market right before launching chemical warheads at India's grain producing sites, causing mass starvation, hyperinflation and instability in india. We can destroy India's financial system with hackers artificially hyperinflating Indian currency. There are so many ways to cause immense damage to India that just don't work for other countries, it's amazing.
