Why do you do business with China? You can totally refuse.
Iran's complaints against China are fair.
Sure they are fair complaints. But Iran has never sought anything more than a transactional relationship with China, after the Western sanctions were lifted they immediately said that they would try to lessen dependency on China.
The truth is that China is also very close to Saudi Arabia + GCC and even Israel. Whereas Iran is close to India, even setting up a competing port for Gwadar in Chabahar.
The interests don't align all that well, so neither side is really interested in a mutual defense treaty, or any kind of deeper relationship between the two sides.
The dynamics of global politics would have to shift quite significantly before such a thing can happen.

Iran may have seeked something more than transactional, but really China didn't seek it.
Well think about it. If China goes to war with India in the near future, do you think Iran will also help us by declaring war on India? How about Japan? How about the USA?
They don't want to get sucked into our wars, and vice versa. Plus, the GCC is still geostrategically important for us, considering how much oil they have. Most of China's allies in the Muslim world (e.g. Pakistan) are Sunni states, it won't help if China chooses another side in the sectarian divide.
