Regarding evolution it has been explained in all the religious books.
Kashmir Shaivism especially, is a non-dualistic school of thought. It does hold that both the reality we perceive around us and 'The Brahman ' are real . While Advaita Vedanta says that what we perceive around us naturally , is actually an illusion. But both are non-dualistic schools of thought. which means -both firmly hold that Brahman and the manifested reality are not disjoint from one another . The manifested is just part of 'The Brahman' .
This is very very different from pantheism and polytheism .

You are if you want to call yourself hindu. No authorities in hinduism to certify that. There is a saying in one of the scriptures, I don't remember which one- which says that their is nothing but god. So in that sense all paths lead to god.

This is the definition of pantheism: "Pantheism is the belief that the Universe (or nature as the totality of everything) is identical with divinity, or that everything composes an all-encompassing, immanent god. Pantheists thus do not believe in a distinct personal or anthropomorphic god."
The concept that there is no other reality but god and nothing but god is non-dualism, also called pantheism where the underlying primordial consciousness manifests as the universe and everything within and without. Kashmir Shaivism approaches non-dualism in a practical manner validating our subjective reality as real too (it does not say it is not an illusion) unlike Advaita Vedanta which is dismissive of our subjective experiences. So both are examples of pantheism.
Hinduism also is polytheistic because of the dualistic school of thoughts. Even Vaishnavas, Shaktas, and Shivas concede the validity of Vedanta, which makes Hinduism both pantheistic as well as polytheistic.
