What's new

Biryani Mastani is here to prove there's more to biryani than chicken and beef

OK But I Find It Surprising That You Would Prefer Goat or Lamb Over Chicken or Beef.I Don't Know About The Mutton You Have In Your Area But The Goats and Lambs In Our Area Are Mountain Dwelling And Trek Long Distances That Kind Of Makes Their Meat Tough

I chose Lamb/beef/chicken as per the type of dish/cuisine.
1.Beef is excellent for Steaks and continental dishes. i am not very fond of desi beef dishes.
2. Chicken is good as fried/bbqed dishes and dishes which requires comparatively less time to prepare. Chicken is not suitable for Dishes like : Nihari, Birihyani , Haleem, Stew etc which takes prolonged time and punishment !!
3. Lamb/Goat and Game ( Banned) are best suited for Desi Dishes but you have to use young goats/lamb for meat and very specific cuts : Chest , Leg , ribs, hind etc.
4. Pork again is best as continental dishes .. in india i like only Koorgi and Goan pork dishes.

three days back i had one of the best biriyani in recent times @
